A banty is a miniature chicken with a very big attitude. These eggs would be graded as small but oh so tasty! Of course, as usual, we have to label them for pet consumption but we eat...no we relish eating these little sweeties...ourselves!

Chaya SpinachGrower: Sunset House Gardens
Price: $3.50 ( Large bag )Available (Exact): 3
Eat your greens! Large bag of Chaya leaves. Chaya does not cook down like most spinach leaves. A bag goes a long way. Do not consume large amounts raw. It should be boiled for 5 minutes first. Toss out the water afterwards. At least 10 0z. Large gallons sized baggy.
I grow 2 types of Chaya. This is a mix of both kinds.
Nutritional analysis has shown Chaya richer in iron than spinach and is a good source of potassium and calcium. Chaya leaf is high in protein (5.7%), and contains crude fiber (1.9%), calcium (199.4 mg/100 g), potassium (217.2 mg/100 g), iron (11.4 mg/100 g), vitamin C (164.7 mg/100 g), and carotene (0.085 mg/100 g). The levels of Chaya leaf nutrients are two to threefold greater than most edible leafy green vegetables, and like spinach it provides appreciable amounts of several essential mineral macronutrients necessary for human health.

Chaya Spinach (small leaves)Grower: Cat Creek
Price: $2.69 ( bag )Available (Exact): 1
Grown by Bree, Ian & Ellen in Clearwater. I steam or stir-fry Chaya with olive oil and garlic and you can add just about anything to this miracle dish! Amazing delicious with fresh eggs too!!Some call this a miracle plant! Brought down from the Mayans to modern Mexicans, south Texas seems to be the only region in the United States that knows Chaya exists. Researchers say that this plant contains powerful doses of vitamins, proteins, and minerals. Other researches done have provided that the plant provides a "megadose of vitamins" and about 10 times the minerals of other healthy vegetables. Also, Chaya has been used by the locals of southern Texas to control blood sugar levels with great success. The leaves are the edible part.Although it is common practice in Mexico to use the leaves raw in agua fresca, a tea-like cold drink, chaya does contain cyanogenic glycosides, which are a source of cyanide poisoning. Therefore according to most US and English resources it should not be eaten raw. Boiling leaves for at least 5 minutes releases the cyanide and makes the leaves safe to eat. Even though some people tend to eat raw chaya leaves, it is unwise to do so. Grown organically in Dunedin by Bree & Courtney.

Chevre Goat CheeseGrower: The Dancing Goat
Price: $11.00 ( 1/2 pound )Available (Exact): 5
ON SALE THIS WEEK!!! All cheese has a 10 day sell by date. The Dancing Goat milk is sold for pet consumption only. Florida law states that you must be a Grade A Dairy to sell for human consumption and that is a $10,000 process which would be reflected in the price of milk. There are no Grade A Dairies that sell raw milk, goat or cow! Only pasteurized milk is permitted to be sold for human consumption. We have been using the farm fresh raw milk in our household for over 6 years but cannot sell for you to use in yours. Plain and simple. Please do not ask any questions relating to the milk for human consumption and put me in jeopardy! Our milk is not pasteurized or altered in any way. It is strained immediately after milking and put in an ice water bath to speed the cooling process - we follow the same procedures as the mini-dairies that have been approved out west (Oregon, Washington, etc.). Frozen milk is available upon request for those who wish to pick up less often but keep a continuing supply for their needs. All milk which goes in the freezer is frozen within 48 hours of milking. We have found this prevents separation when thawing the milk.

Eggs - Farm Fresh!Grower: The Dancing Goat
Price: $6.49 ( 1 Dozen )Available (Exact): 20
FREE RANGE PASTURED CHICKEN EGGS, No antibiotics, no hormones, soy free! - again, we have to label for pet consumption only because we don't wash in a chemical rinse. These eggs are neither washed nor refrigerated in order to slow the aging process. Occasionally we wipe off mud and pen debris with a damp cloth just because it looks ugly! Because of this you may find “treasures” of mud, bits of hay and the occasional feather in your cartons. Once an egg is refrigerated it must remain refrigerated and the aging process has begun. Washing takes the “bloom” off an egg which is nature’s way of preservation. Due to our “no wash” policy, we ask that everyone wash their eggs before use in their pet's meals. Fresh farm eggs easily last at least two weeks on the shelf and up to a month refrigerated. Empty cartons are gladly accepted of any type! Flats, dozen, 18 pack - Styrofoam, cardboard or plastic!
